This red blend displays a complex bouquet of rich dark red fruit aromas like dark plums, black cherries and some earthiness. These aromas are also experienced on the palate and are accompanied by sweet tobacco and Christmas cake characters. This wine has a well-integrated tannic structure showing elegance and some youth. Wine will also age well.

In the cellar
Whole berries were cold soaked for 72 hours before inoculated. Fermentation took about 15 days on all cultivars at 18 – 28 Ëš C with a carefully planned pump over/punch down schedule in open fermentation tanks. The Cabernet Sauvignon tank were left on the skins for another 10 days before pressed. The Merlot and Cabernet Franc tanks were pressed straight after fermentation. Malolactic fermentation was done in 300 L barrels. Wine was oak matured for 16 months before the final blend was blended for bottling.
In the vineyard
All blocks were picked by hand at optimum ripeness and stored overnight in a cold room before processed the next morning. Grapes were hand sorted and de-stemmed but not crushed.
Ageing
Fermentation was done in 300 L barrels for 16 months.

About the Wine Estate
In 1995 the Gabb family, originally from Shropshire, UK, fell in love with this picturesque wine farm, restoring it to what it is today, now surrounded by 40 hectares of beautiful vineyards.
We are incredibly fortunate to be nestled amongst the Schapenberg hills, beneath which lay 350 million year old decomposed granite soils. This creates one of the most prestigious terroirs in South Africa, and is where our vines are planted.
As well as fantastic views, our vineyards benefit from the cooling and cleansing south-easterly wind, known locally as the ‘Cape Doctor’, which comes in from nearby False Bay and the Atlantic Ocean.
