A perfumed nose with upfront white pepper, lavender, cherries, oreganum and other red fruit and undertones of pimento spice. The palate is elegant and balanced, with an underlying structure and a long finish. The dried herb and red fruit aromatics are elevated by the distinguished chalky tannins of this wine, which continue to evolve as the wine opens up. Truly a wine to savour and with a few years ageing potential.

In the cellar
Syrah grapes are hand harvested and cooled overnight. Some batches were fermented in open top concrete tanks and others were fermented under submerged cap. All batches were fermented with 30% crushed whole bunch. Fermentation
occurred spontaneously. The wine was drained and pressed off the skins as soon as fermentation was completed. The wine was aged in a combination of foudré & seasoned 225L & 300L French oak for 12 months.
